Description
Horse products historically have been a vital part of traditional Mongol economy . Today , skins are still sought for leather and milk for the diet ; there is a renewed consumer demand for horse meat . Mare’s milk is low in fat and cholesterol content and is primarily used for a lightly fermented drink called airak or kumys . The mare produces little milk and can withhold it , so the foal is brought to its mother to nurse ; this starts the milk flowing , and the milker (usually female) then takes over . The drink made of mare’s milk is first mentioned by Herodotus in the 5th century B.C . The production of kumys is described in the 13th century by the Franciscan Friar William of Rubruq who visited the Mongol court as a papal legate .
